Chocolate Brownies
Ingredients

225g/8oz unsalted butter, cubed
300g/10oz dark chocolate, broken into small pieces
3 large eggs
225g/8oz dark muscovado sugar
100g/4oz plain flour
1 tsp baking powder
1 or 2 drops vanilla extract

Makes 16 squares




Pre-heat the oven to 160c/325f/Gas 3.  Grease the bottom of a shallow 23cm/9in cake tin (square is best).

Melt the butter and chocolate together.  (You can do this in a microwave for a max. of 2 minutes).  Stir well.

Beat the eggs until pale and whisk in the sugar until well combined.  Fold in the chocolate mixture.  Sift in the flour and baking powder.  Add the vanilla extract and stir until smooth.

Pour into the tin and bake for a minimum of 30-35 minutes or until firm to the touch.

Allow to cool on a wire rack for at least 1 hour. 



Delicious served with pouring cream, chocolate custard or on their own.
