There is a commonly believed notion that the term �appetizers� was coined to discribe food that you eat before a meal��intended to stimulate one�s appetite.� That may well be the word�s coinage, but as far as dining is concerned nothing could be more wrong-headed than to serve an appetizer that somehow makes the guest more hungry. Appetizers are meant to slow down the meal, to cure an immediate gnawing hunger (all the better to luxurate in dining well), and to make it possible to enjoy an apperitif without getting drunk. Enjoying an appetizer is also a pleasant way to pass the time while the kitchen finishes cooking the meal. Appetizers thus should be considered more a small meal than as first course.
