Mam-Maw's Yam Balls
1 20-oz can candied yams, drained
1 8-oz can crushed pineapple, drained
1 C miniature marshmallows
Approx. 2 - 3 C grated coconut (for topping)
Mash yams in a large bowl. Add pineapple and mix in thoroughly. Add marshmallows and mix. Spoon out mixture in about 3/4 C amounts (tennis ball sized) and shape into a ball. Roll in coconut. Continue with rest of mixture. Makes 8 balls at this size. Place balls on cookie sheet and bake at 350* for long enough to lightly brown coconut and melt marshmallows. Serve warm.
This recipe is a tradition at the holidays in my house. It's one of my favorites.
