Pecan Pie
3 eggs 1 cup light corn syrup 2/3 cup sugar 1/3 cup margarine or butter, melted 1 teaspoon vanilla 1 1/4 cups pecan halves 1 cookie pie crust - see recipe below
In a large bowl lightly beat eggs just until mixed. Stir in corn syrup, sugar, margarine, and vanilla. Mix well. Stir in pecan halves.
Place pie crust on oven rack, then pour the filling into the shell.
Bake in a 350F oven for 40-45 minutes or until a knife inserted near the center comes out clean. Cool on a wire rack, store in the refrigerator.
Cookie Pie Crust
1 1/2 cup crushed Nilla Wafers (about 30-50 cookies) 6 Tablespoons margerine or butter, melted
Combine ingredients and press into a 9" pie pan.
