Storage of Chocolate
Do not
refrigerate or freeze
Store at room temperature 65-70
Relative humidity 50%
Stays fresh for 6-9 months
A slight change in color will not affect taste
Note: Old chocolate will not melt properly
Melting

Melt
chocolate in microwave in small increments, or double boiler.
Chocolate should feel warm, but never hot (not to exceed 120 F)
Water/steam (from double boiler) will cause chocolate to harden
and become
unworkable
Adding 1 Tbsp paramount crystals to 1 lb chocolate can help restore
consistency
Buying
chocolate
Know
what kind of chocolate you are purchasing (Is it chocolate coating
or pure chocolate?) Pure chocolate may need tempering.
