Storage of Chocolate

Do not refrigerate or freeze
Store at room temperature 65-70
Relative humidity 50%
Stays fresh for 6-9 months
A slight change in color will not affect taste
Note: Old chocolate will not melt properly

Melting chocolate coating

Melt chocolate in microwave in small increments, or double boiler.
Chocolate should feel warm, but never hot (not to exceed 120 F)
Water/steam (from double boiler) will cause chocolate to harden and become
    unworkable
Adding 1 Tbsp paramount crystals to 1 lb chocolate can help restore consistency

Buying chocolate

Know what kind of chocolate you are purchasing (Is it chocolate coating or pure chocolate?) Pure chocolate may need tempering.
