Dark Chocolate Truffles

 Ingredients  Utensils
   
 1 stick of butter  Paintbrush
 2 cups heavy cream  Mini-scoop
 1 lb, 14oz - Dark Bordeau chocolate  Small/Large Bowls
 1 tsp. Lecithin  Spatula
 ¼ tsp. Fermvertase  Measuring cups
 Dark chocolate melting chips  Teaspoon


Directions:
1. Combine heavy cream, Lecithin and Fermvertase. Heat in microwave for 2 mins.
2. In separate container, melt butter in microwave.
3. In separate container, melt Dark Bordeau chocolate in microwave.
4. When all 3 ingredients are melted at approximately same temperature, whip together     in large bowl for about 3 mins.
5. Refrigerate mixture overnight.
6. Paint dark chocolate buttons on wax paper.
7. Mini-scoop truffle balls & roll by hand from refrigerated mixture. Keep cool.
8. Hand dip truffle balls in melted chocolate and place on top of buttons.

Yields: 3 lbs.
