Chess Pie

Sweet Potato Pie

This is a very rich southern favorite. Bake this in the morning and
then refrigerate all day to set the butter in it.

1/2 lb.   butter
2 cups  sugar
1 tbls.  flour
5 eggs, separeated
1 cup milk
1 tsp, vanilla

5 to 6 medium sweet potatoes
2 1/2 Cups of sugar
2  Sticks of butter or margarine
2 tbls. Flour
1/2 cup of milk
4 Eggs
1/4 tsp. Cinnamon
1 tbls vanilla

Boil potatoes until tender, drain water, mash potatoes until there
are no lumps. Mix sugar, butter, flour, vanilla, and eggs into potatoes. Add milk and mix with beater, sprinkle cinnamon into
potatoes and beat until smooth. Pour into pie crust and bake at
375 degrees for one hour. Makes two pies.

Cream butter and sugar, add flour and egg yolks, milk and vanilla.
Beat whites of eggs until stiff, but not dry, and add them last, folding
into other mixture. Pour into two pie shells. Bake at 275 degrees for
45 minutes.

Cincinnati Fudge Cookies

Chocolate Brownies

2  Sticks of margarine or butter
4 oz  Chocolate
2 cups of Sugar
4 eggs
1 cup flour

1 large pkg. Nestles chocolate chips
1 can Bordens sweetened condensed milk
1 stick butter
1 cup flour
1 tsp. vanilla

Melt margarine or butter with the 4 oz of chocolate. In  same pan add
2 cups  sugar and slowly add the  4 beated eggs, then add the flour
bake  at 350 for 20 to 30 minutes

Melt chocolate chips, butter and condensed milk in double boiler,
stirring occasionally, when melted, add slowly one cup flour and
1 tesspoon vanilla. (this makes the most delicious fudge sauce over
ice cream , if you stop at this point.)
If cookies are desired, place dropped fudge dough cookies mixture
by teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes
in 350 degree oven. cool and enjoy

T.G.I.Fridays  "Potato Skins"

My Broccoli Casserole

Idaho potatoes
Shredded colby chesse
bacon, fired and crumbled
hot oil to deep fry
sour cream (with chives optional)

3  boxes of frozen broccoli
1/2 lb of Velveeta cheese
2 sticks of butter or margarine
2 sleeves of Ritz crackers

Bake potatoes wrapped in foil for 1 hour at 425 degrees or until done. When cool enough to handle cut potatoes in half lenthwise
(if large they may be quartered). Remove insides of the potato leaving about 1/8" of potato in the skin. Deep fry these skins (not
too long or they'll get to crispy). Pat dry with pager towel. Lay skins
meat side up on cookie sheet and sprinkle with crumbled bacon
and grated colby cheese. Put in oven for a few minutes, until
chesse is melted. Serve with sour cream for dipping !!!

Cook frozen broccoli according to package directions. Drain.  Place
cooked broccoli in a casserole dish.  Cube the Velveeta cheese  place it on over the broccoli..
In a sauce pan melt butter and crushed Ritz crackers. Sprinkle cracker mixture over broccoli.. Bake at 350 degrees for 1/2 hour
or until the mixture is bubbling around the edge..

Swiss Steak

Fried Cabbage

4lb Swiss Steak
1 can whole tomato's
1 can tomato sauce
4 med onions
3 garlic cloves
1 green pepper
1 red pepper
3 celery stalks
1 cup water

1/2 head of cabbage
1 stick of butter
1/2 green pepper
1 med onion
season salt
pepper

Place all  butter, onion and green pepper in pan.. cook until they are
tender.. add  cabbage salt and pepper.. stir fry  until done..

Tenderize meat with meat tenderizer. Place steak in a crock pot add
tomato's and sauce .... In a skillet place green and red peppers, onions, celery, garlic and butter.. cook until tender .. add to  meat
and  sauce.. cook in crock pot for about 31/2 hours or unit meat falls
off bone
