Ingredients:

Preparation:
Heat water and sugar until the sugar has dissolved and then cool.
Mash the chile and garlic to a paste in a pestle and mortar. Pour in the sugar water and mix.
Add the lime juice, vinegar then fish sauce to taste. Mix well and stir in the finely grated carrot.
� 2 tsps sugar
� 1 fresh chile, finely chopped
� 2 small cloves garlic, chopped
� 2 teaspoons lime juice
� 1 teaspoon rice vinegar
� 2� Tablespoons fish sauce
� 2 teaspoons shredded carrot
