Colcannon

Dough:

� 6 large potatoes
� 1 head of green cabbage
� 4 large onions
� salt & pepper
� 1 cup cream (optional)

Preparation:

Peel potatoes and cut into cubes. Chop cabbage, removing stalk. Peel onions and cut into cubes. Put everything into a large pot and boil together till the potatoes are cooked through.

Remove from heat, drain, and mash everything together. Salt and pepper to taste. Transfer to a deep baking dish and bake at 350� until colcannon just begins to brown.

If a vegan dish is not required: Add a cup of cream to the mixture when you mash it, and butter the baking dish before putting the colcannon into it. Serve with butter.
