POOHSGALLERY shared a great recipe for Potato Salad:
5lb Red Potatoes cubed/unpeeled
1tsp salt
1/2 tsp pepper
8 hard boiled eggs chopped
1lb sliced bacon cooked and crumbled *bacon bits as a sub is fine*
2 cups shredded cheddar cheese
1 medium vidalia onion chopped
3 dill pickles chopped
1 1/2 cups sour cream
1 cup mayo
2-3 tsp yellow mustard
bake the potatoes at 425 for 40-45 minutes in a regular glass baking pan sprinkle w/ salt and pepper
let them cool
combine the other dry ingredients
mix sour cream mayo and mustard
pour sour cream mayo and mustard over potatoes and other ingredients
serves 20 give or take.
