Crock Pot Baked Apples

6 lg. cooking apples
3/4 c. orange juice
2 tsp. grated orange rind
1 tsp. lemon rind grated
3/4 c. rose wine or sparkling grape juice
1/4 tsp. cinnamon
1/2 c. brown sugar
Whipped cream (for topping)
1. Remove core from apples and place in slow cooker/Crock Pot.
2. Mix together all other ingredients except whipped cream.
3. Pour over apples.
4. Cover pot and cook on low for about 3 1/2 hours or until apples are tender.
Cool and serve with whipped cream

Crispy Rice Jack-o-lantern

With all that's going on today, I think more and more parents will be having the little ones stay very close to home.

This is an easy way to make a Jack-o-lantern you can eat.
1 Stick Butter
2 (10 oz). Packages Marshmallows
12 C. Rice Crispy Cereal
1 tsp. Yellow Food Colour
1/4 tsp. Red Food Colour

Decorating Tips
12 C. Bowl (not plastic)
Melt butter on low heat and add marshmallows.
Stir marshmallows frequently.
When marshmallows have dissolved, add food colours and mix well.
When the marshmallow mixture is uniform in orange colour add cereal and stir and mix until rice crispies are completely coated.
Pour mixture into the bowl that has been well sprayed with a non-stick spray.
Carefully press down cereal (spray the spoon or your hands when pressing the cereal, this helps so the cereal will not stick).
Place into the refrigerator until completely chilled and firm.
When the pumpkin is chilled remove from refrigerator and invert onto a plate.
Remove bowl and decorate with leaves and stem.
A great jack o lantern smile will be the finishing touch.
The Jack-o-lantern makes a great centrepiece and a delightful treat.

Honey Dijon Fettuccine and Chicken

The natural sweetness of honey blended with the distinctive sharpness of Dijon-style mustard makes this dish one to savour.
Serve with a pre-packaged salad of gourmet greens and crunchy dinner rolls.

Preparation time: 10 mins
Cooking time: 10 mins
Ingredients
1 package (9-oz.) BUITONI® Fettuccine, cooked according to package directions
4 4 to 6-oz. chicken breast halves, cooked
1 can (14.5-oz.) chicken broth
2 tablespoons Dijon mustard
2 tablespoons honey
2 tablespoons cornstarch
1 cup yellow bell pepper, strips
1/2 cup red bell pepper strips
1/2 cup red onion strips
Directions
COMBINE broth, mustard, honey and cornstarch in small bowl; mix until smooth.
Transfer to medium skillet; add chicken breasts, bell peppers and onion.
Heat to a gentle boil; reduce heat to low.
COOK, covered for 10 minutes or until sauce is thickened, vegetables are tender-crisp and chicken is heated through.
Serve over hot fettuccine.
Serving Size: 4

Triple Chocolate Surprise

1 pkg. chocolate cake mix
1 carton (8 oz) sour cream
1 pkg. instant chocolate pudding mix
1 cup chocolate chip morsels
3/4 cup oil
4 eggs
1 cup water
Spray crock pot with non stick cooking spray or lightly grease.
Mix cake mix, sour cream, pudding mix, chocolate chips, oil, eggs and water in bowl by hand.
Pour into Crock Pot, cover and cook on low heat 6 to 8 hours, or on high for 3 to 4 hours.
This is some very rich and yummy stuff!
I love it because you don't have to fuss with it.
It's great with a scoop of vanilla ice cream on top too!

Sufferin' Succotash

2 Cups Frozen Lima Beans
1 1/2 Cup chopped onions
1/2 cup sliced celery
2 Cups frozen corn
2 T. chopped pimento
1/4 tsp. garlic powder
1/4 tsp. dried sweet basil
1/2 tsp. salt
1/8 tsp. pepper
1 Tin condensed cream of mushroom soup.
Grated medium cheddar cheese, sprinkle
Measure first 10 ingredients into large bowl.
Stir together well.
Put into 3 1/2 quart slow cooker.
Cover.
Cook on Low for 8 - 10 hours, or on high for 4 to 5 hours.
Stir. Sprinkle with cheese before serving.
Makes 4 Cups.

Apple Sauce Cake

2 c. shortening
4 c. apple sauce
4 c. sugar
1 t. cinnamon and clover
2 c. currants
2 c. raisins
4 t baking soda
2 t. salt
Add soda to HOT apple sauce before anything else.
Add other ingredients and mix (except the flour).
Then add flour to make stiff batter.
Cook till toothpick comes out clean.
This recipe is my great grandmothers and it is dated the year of 1884.. and we still use it... just watch the flour amount.
You can also brush this with Brandy or Rum and wrap.
Yummy!!
