We missed a week, for obvious reasons. We were shocked, saddened and angered by the terrorist attacks on the United States, but are now determined to continue with our lives. That includes our recipe exchange. But the occurences, and those lost, are never far from our thoughts.

Applesauce Kugel

In attempt to gain normalcy and in honour of Rosh Hashanah peek inside for Applesauce Kugel recipe.
Ingredients:
1 lb wide noodles
4 eggs
2 Tbsp sugar
1/2 tsp vanilla extract
1/2 cup melted margarine
1/2 cup raisins
2 cups applesauce
cinnamon and sugar
Instructions:
1.Cook noodles until nearly tender and
drain.
2.Beat eggs with a fork and add the
sugar, vanilla, margarine,
raisins,
applesauce and noodles, mixing well.
3.Pour into a large greased baking dish.
4.Combine some cinnamon and sugar
and sprinkle on top.
5.Bake at 350 F/175 C for 1 hour or
until browned on top

Country Hash

1 lb. ground beef
1/2 C. chopped onion
1 C. green pepper chopped
1/2 C. long grain rice
28 oz. can tomatoes
1 tsp. chile powder or to taste
1 tsp. salt
1 tsp. pepper
In a no stick pan, cook hamburg, onions, green pepper until hamburg is brown.
Drain and rinse. Add rice, tomatoes, chile powder, salt and pepper.
Cover and simmer for 30 minutes.
Great cold weather recipe.
Apple-Cinnamon Chop Bread

With fall comes apple season!
1 loaf frozen sweet bread dough
3 lag. apples
½ c. sugar
½ tsp. cinnamon
Thaw dough at room temperature on a cutting board lightly sprayed
with vegetable oil spray for 2 hours, or until thawed.
Pat into a 10" circle on cutting board.
Cover with a cloth and let rise in a warm place for about 1 hour or until doubled in bulk.
Or dough may be thawed and allowed to rise overnight in the refrigerator.
Meanwhile, peel and core apples and slice into a bowl.
Toss with sugar and cinnamon and let stand at least 30 min.
When dough has risen, remove apple mixture from bowl with a slotted spoon,
leaving behind any accumulated juices.
Pile on dough. Draw dough up around apples.
With a large, sharp knife, slice bundle about five or six times across,
then five or six times in the other direction.
With knife, gently mix by lifting dough and apples from bottom and piling on top.
The dough pieces should be about 2" square.
With a spatula, gently mound mixture on a lightly greased baking sheet,
re-shaping into a circle and making sure most of the filling touches the dough.
Bake at 350°F for about 30 min.
Remove from oven and let stand 10 min. before removing from baking sheet.
Baked Apples

How about something simple...
6 apples
1 cinnamon stick
Raisins (optional)
4 Tablespoons of honey
1/2 cup cider
2 Tablespoons (1/4 stick) margarine or butter
preheat oven to 350 deg F.
Core each apple. Peel away the skin from the top part of the apple.
Put the apples in a baking pan.
Stick 1" cinnamon stick in each apple where you removed the core.
Sprinkle with raisins and dab with honey.
Pour the cider in the core hole.
Dot tops of the apples with margarine or butter.
Bake for 30 minutes or until soft.
Apple Pizza

1 pound store-bought pizza dough
1/4 cup apple jelly, melted
4 medium-sized apples, cored, peeled, and sliced
1 tablespoon sugar
1 teaspoon ground cinnamon
With your fingertips, gently spread the dough to cover the pan,
pressing it up the edges to form a rim.
If the dough is too sticky, lightly dust it and your hands with flour.
Spread the melted apple jelly evenly over the dough,
then arrange the apple slices in a single layer.
In a small bowl, combine the sugar and cinnamon, sprinkle over the apples.
Bake for 18 to 20 minutes, or until the edges are golden.
Remove from the oven and cool slightly in the pan on a wire rack.
Slice and serve warm or allow to cool before serving.

Crockpot Monterey Spaghetti

I don't have any apple recipes here with me, but this one is very yummy and easy!
1/4 pound spaghetti, broken into pieces
1 egg
1 cup sour cream
1/4 cup grated Parmesan cheese
1/8 teaspoon crushed garlic
3 cups shredded Monterey Jack cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 (6 ounce) can French fried onions
In a large pot with boiling salted water cook
spaghetti until al dente. Drain.
In a large bowl mix together the sour cream, grated
Parmesan cheese, and minced garlic.
After beating the
egg in a small bowl, transfer to the large bowl and
blend together.
Transfer to a greased slow cooker.
Mix cooked and drained spaghetti, 2 cups grated
Monterey Jack cheese,
thawed spinach, and half of the
French fried onions to the slow cooker.
Stir contents
of slow cooker until just blended.
Cover and cook on low for 6 to 8 hours or high heat
for 3 to 4 hours.
In last 30 minutes of cooking, turn to high if cooking
on low
and add remainder of grated Monterey Jack
cheese and
French fried onions to top of casserole.
Serve when cheese is melted.

Sweet and Sour Hamburger

Something Simple and Yummy
Ground Beef
l can tomato soup
1/2 cup vineger
1/2 cup sugar
2 TBs mustard
Season hamburger to liking and form small patties.
Fry and set aside and drain oil from pan.
Mix rest of ingredients together, put in frying pan
and add the patties back in pan and simmer.
Serve hot over rice or with a baked potato.
