Chicken Enchilada Casserole

Family favourite, and easy to make too :)
Yield: 4 servings
Temperature: 350 F. Cooking time: 25-30 minutes
Ingredients:
1 - 10 ounce can mushroom soup
one-third cup milk
2 - 6 ounce cans chicken
one-half teaspoon salt
1 teaspoon garlic salt
12 corn tortillas
Shortening for frying
1 - 4 ounce can chopped green Chile (fresh or frozen may also be used)***
one-half cup chopped onion.
1. Combine soup and milk.
2. Drain chicken; add salt and garlic salt.
3. Fry tortillas in one-half inch shortening on each side until soft.
4. Layer ingredients in a 2-quart casserole dish
starting with tortillas, chicken, chile and onion; repeat.
5. Pour sauce over entire dish, cover, and bake 25 to 30 minutes at 350 F.
*** You can get canned green chile (mild) for those who do not like it hot.
When I make this, I usually make
two casserole dishes,
one with mild green chile for everyone in the family,
and one with hot for me, LOL.

Notes:
A very tasty dish. This can be put together a head of time for your guests.
Ingredients:
1 envelope Lipton Recipe Secrets Herb With Garlic Soup Mix
1 container (16 ounces) sour cream
1 C. ricotta cheese
1 C. shredded mozzarella cheese
1/4 C. chopped pepperoni
Preparation:
Preheat oven to 350 degrees.
In 1 quart casserole, combine soup mix, sour cream, ricotta cheese, 3/4 cup mozzarella cheese and pepperoni.
Sprinkle with remaining mozzarella cheese.
Bake uncovered 30 minutes or until heated through.
Serve, if desired, with sliced Italian or French
bread.

Spaghettini with Chicken, Onion and Green Pepper

Prep. Time: 15 minutes
Serves: 4
What You'll Need
1 pkg 500 g Catelli Spaghettini
2-3 tbsp olive oil 30-45 mL
3 boneless, skinless chicken breasts, cut into strips
1 onion, sliced
1 green pepper, chopped
1 jar 700 mL Catelli Garden Select 6 Vegetable Recipe Pasta Sauce - your favourite flavour
Salt and freshly ground pepper
Grated Parmesan cheese
What's Next
Cook spaghettini according to package directions.
Heat oil; sauté chicken until golden. Remove and set saide.
Add onion and green pepper; sauté 4-5 minutes.
Stir in sauce and reserved chicken; simmer 2-3 minutes.
Season to taste with salt and pepper.
Serve sauce over spaghettini and sprinkle with cheese, if desired.
