It was a very hot week and I guess no one wanted to think about cooking!

8 oz. cream cheese
1 egg
1/3 cup sugar
8 oz. chocolate bits
1/8 tsp. salt

1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp. baking soda
C
1 tsp. vinegar
1 tsp. vanilla
1 cup water
1/3 cup oil
1/2 tsp. salt
A) Beat well..cream cheese, egg, sugar, salt. Stir in chocolate bits and set aside.
B) Sift together..flour, sugar, cocoa, baking soda.
C) Add remaining ingredients to dry mix and beat well.
Fill small cupcake holders with 2/3 cocoa mixture and 1/3 cream cheese mixture.
Bake at 350 degrees for 20 minutes. Makes approximately 40 cupcakes.

Fast shepherd's pie

Preparation Time : 10 minutes
Microwaving Time : 10 minutes
Makes : 2 cups
1 large baking potato
1 tsp (5 mL) butter
2 tbsp (30 mL) milk
1/4 lb (125 g) lean ground beef
1 tbsp (15 mL) ketchup
1/2 cup (125 mL) frozen corn or mixed vegetables
1. Pierce potato in several places and microwave, uncovered, on high until soft,
about 5 minutes. Cut in half and scoop out potato.
Using a fork, mash with butter and milk.
2. In a 9x5-in. (2-L) glass loaf dish, stir beef with ketchup.
Microwave on high, uncovered, for 1 minute.
Stir and break up any lumps, then continue microwaving for 1 more minute.
3. Finely chop corn or vegetables or leave whole. Stir into meat.
Smooth into an even layer. Top with potatoes, covering meat evenly.
Microwave, uncovered, for 2 minutes.
If you like a golden potato top, slide casserole under a preheated broiler for 1 to 2 minutes.
Watch to prevent browning. Cool to lukewarm before serving.
