Sausage or Hamburg Squares

1 cup Bisquick
1/3 cup milk
4 Tbs. mayonnaise (divided)
1 pound sausage or hamburger
1 small onion chopped
2 cups grated cheddar cheese
1 (4oz.) Can mild green chillies drained and chopped
1 egg
Combine Bisquick mix with milk plus
2 tablespoons of the mayonnaise.
Spread in 13x9 pan.
Mix will be thin but spread into corners.
Meanwhile cook sausage (or hamburger) in skillet
stirring to break up the meat and brown it.
Add onion and cook till onion is tender crisp.
Drain well.
Spread meat mix over biscuit dough.
In medium bowl stir together egg, grated cheese,
last 2 tablespoons mayonnaise and green chillies.
Spread on top of meat and press down slightly.
Bake uncovered in 350 degree oven for 30-35 minutes.
Let cool about 10 minutes before cutting in squares.

Pineapple Smoothie

Notes:
You can make these at home,
and they are much cheaper than
what they serve in the malls.
Ingredients:
1 can unsweetened pineapple chunks -- 20 ounces
1 C. buttermilk
2 tsp. vanilla extract
2 tsp. liquid sweetener
Mint leaves, optional
Preparation:
Drain pineapple, reserving 1/2 cup juice.
Freeze pineapple chunks.
Place juice, buttermilk, vanilla, sweetener and frozen pineapple
into a blender container. Blend until smooth.
Pour into glasses and garnish with mint if desired.
Serve immediately.

Dream Fruit Dip

This fruit dip is addicting! Great for get-togethers.
Ingredients
12 ounces cream cheese, softened
1 C. powdered sugar
1 C. sour cream
1 (7-ounce) jar marshmallow creme
2 tsp. Vanilla extract
2 tsp. Almond extract
2 tsp. Cinnamon
Directions
In a bowl beat the cream cheese until smooth.
Add the powdered sugar and beat until well blended.
Add the sour cream and the rest of the ingredients.
Blend just until well combined.
Cover and chill several hours before serving.
Serving Suggestions
Serve with fresh fruit.
(Apple slices, strawberries, bananas, grapes, pineapple chunks).

SALISBURY MEATBALLS

If you use frozen meatballs (either your own or store-bought)
this whips up in no time!
2 tablespoons oil
1 small onion, chopped
4 ounces fresh mushrooms, sliced
3 tablespoons flour
2 cups beef broth
24 frozen meatballs
dash Worcestershire sauce
In a medium saucepan, heat the oil
and sauté the
onions until softened.
Add the mushrooms and cook for
2 minutes.
Stir in the flour until dissolved.
Gradually add the beef broth, stirring constantly
until smooth and thickened.
Add the meatballs and
simmer,
partially covered until hot and bubbling
and
meatballs are heated through,
about 10 - 15 minutes.
Serve over mashed potatoes. 4 servings

Lazy Cabbage Rolls

1 1/2 cups long grain rice
3 Cups water
1 tbs. vegetable cooking oil
1 cup chopped onion
2 cups coarsely grated cabbage, packed
1 tbs. all purpose flour
1 - 28 oz. can tomatoes
1 1/2 cups low-fat plain yogurt
1/2 tsp. granulated sugar
1/2 tsp. salt
1/4 tsp. pepper
1/c cup boiling water
Cook rice in first amount of water
about 15 min. until tender.
Heat cooking oil
in large frying pan.
Add onion and cabbage.
Stir-fry until onion is soft. Sprinkle
with flour.
Add remaining ingredients and rice. Mix.
Pour in 3-quart (4L) casserole.
Bake,
covered for 1 hour in 350 f oven.
Makes about 7 1/2 cups.

MINTY ICE CREAM PIE

Makes 8 servings
1 package (4.67 ounces) chocolate-covered thin mint candies
1 quart vanilla ice cream, softened
2 teaspoons creme de menthe liqueur
1 (9 inch) chocolate crumb pie crust
Set aside 8 thin mint candies to garnish the pie.
Chop the remaining candies and place them in a large bowl.
Add ice cream and 1 teaspoon of the creme de menthe, mix well.
Spoon the mixture into the pie crust.
Sprinkle with the remaining 1-teaspoon creme de menthe.
Garnish the top with the reserved thin mint candies,
pressing them half way into the ice cream.
Cover and freeze at least 4 hours, or until firm.
Slice and serve.
No creme de menthe?
Mix a few drops of green food colouring
and 1 teaspoon mint extract into the ice cream instead
... happy cooking!
