| SHEEKH KEBAB 1 lb minced lamb or beef 6 oz Onions 4 large cloves garlic 1 " piece ginger 2 tablespoons besan 2eggs 3 green chilies Small bunch fresh coriander leaves 1 tbsp lemon juice 1 tsp coriander powder 1/2 tsp cumin powder 1 tbsp garam masala powder 1 tsp paprika or chillie powder 2 tablespoons ground almonds 1 1/2 tsp salt skewers Finely chop the onions. Peel and grate the ginger. Put the garlic through a garlic press. Seed and finely chop the green chillies. Chop the coriander leaves. In a large bowl combine all these above ingredients with the meat. In a separate smaller bowl, mix the gram flour. coriander powder. cumin powder. garam masala, ground Almonds, paprika (or chillie) powder and salt. Add this to the meat and mix well. Add the lemon juice and mix. Now beat the eggs and add them to the meat, once again mixing well (preferablv with one'shands!). Divide the mixture into 10-12 equal portions Place each portion on a skewer and shape it like a sausage firmly around the skewer (about 5 " in length} Place the kebabs under a medium grill and cook for about 20 minutes turning half-way through. For cleaning purposes its best to line the grill pan with foil to start with. The kebabs can be served gamished with onion rings dipped in vinegar, chillie powder and salt . Enjoy!!!!!! |
