Baking Powder Biscuits
2 cups flour
4 tsp. baking powder
1 tsp. cream of tartar
1/2 tsp. salt
2 tsp. sugar
1/2 cup fat (butter, shortening or lard)
3/4 cup milk
Sift the flour, baking powder, cream of tartar, salt and sugar together into a mixing bowl.  Work the fat into the flour with your fingers until the mixture resembles coarse meal.  Make a hollow in the center, pour in the milk and stir.  The mixture should hold together but not be too dry.  Gently knead the dough a few times.

Pat or roll out on the lightly floured board to a thickness of 2/3 inch.  Cut with a round cutter (or edge of an empty tin can).

Bake at 475F for 10-15 minutes or until lightly browned.

Yield: 16 to 20 biscuits.
