Salsa Mexicana

Ingredients:
1 pc white onion firmly chopped
6 pcs Tomatoes peeled, seeded and finely chopped
2 pc Red chili finely chopped
1 bundle Cilantro finely chopped
Salt and pepper to taste
1 pc Lemon (juice only)
2 tbsp extra virgin olive oil

Instructions:

1.Place the tomatoes in boiling water for 10 to 20 seconds till skin can be removed easily
2.Remove from boiling water and shock in ice water, wait till cold
3.Peel off all the skin, cut in half, squeeze out all the seeds and finely chop them
4.Put onion, tomato, chili and cilantro in a bowl. Season with salt, lemon juice and olive oil.
5.Stir, taste for seasoning and let marinate for half hour check seasoning again before serving.
