Spanish Paella
Ingredients:
2 tbsp Olive oil
1 pc Garlic Clove, crushed
400 g Chicken meat, diced
100 g Lean pork, diced
1 pc Onion Chopped
100 g Sweet peppers different colors
250 g Rice (Vialone or calrose)
150 g White wine
750 g Chicken stock, boiling
200 g Tomato peeled
1/2 tsp Salt
8 pcs Peeled prawns
12 rings Squid rings
8 pcs Fish Fillet
50 g Green Peas
8 pcs Mussel
20 g Chopped parsley
8 pcs Lemon Wedges
Instructions:
1.Heat the oil, saute the garlic, then remove it from pan.
2.Brown the chicken and pork pieces on all sides.
3.Add onions and sweet peppers. Cover and cook for 10 minutes, d not allow them to brown.
4.Add the rice, heat and stir over high heat until rice becomes translucent.
5.Add the wine boiling the stock, the tomato, the salt, saffron peeled shrimps, squid rings, fish fillets and mussel.
6.Simmer covered for about 15 minutes.
7.Sprinkle in the peas, do not stir.
8.Cover again for a few minutes.
9.Serve in the pan garnished with some choped parsley and lemon wedges.
