Watermelon With Fruit and Cheese
   
1 ripe watermelon, about 10 pounds, cubed and seeded (about 4 cups)
1 small ripe pineapple, peeled, cored and cubed (2 1/2 cups)
1 medium-size honeydew melon, peeled, seeded and cubed (3 cups)
1 medium-size ripe cantaloupe, peeled, seeded and cubed (3 cups)
8 ounces seedless green or red grapes (2 cups)
1 pint raspberries (2 1/2 cups)
1 cup Sangria (optional)
1/2 cup orange juice
7 ounces smoked Gouda cheese, shredded (1 3/4 cups)
 
Combine all ingredients except 2 tablespoons of cheese. Mix well, but gently, and cover with plastic wrap. Chill for at least 4 hours. Sprinkle top with cheese.
