My Mama's Famous Cheesecake

3 pkgs. (8 oz. each) Phillie creamcheese
1 cup sugar
1 Tbsp. cornstarch
1 container (12 oz.) real sour cream
1 tsp. vanilla
5 large eggs

Crust:
3/4 cup graham crackers crushed
3/4 cup Nilla wafers crushed
1/2 cup ground pecans
2 Tbsp. melted butter

Mix in bowl and then put in a 9 or 10" springform pan. Turn oven to 300�F.

In mixer bowl, better to use a standing mixer, cream all the cheese with sugar and then add cornstarch. Mix about 5 minutes. Add sour cream a little at a time.  Scrape down bowl lots.  Add vanilla.  Add eggs one at a time and mix well each time.

Pour into crust. Do not disturb crust. Bake at 300�F for one hour. Turn oven off. 
DO NOT OPEN OVEN DOOR. Keep in closed oven one hour. Remove then cool and chill at least overnight.

Chef's Note:  Don't worry if top cracks a bit, it happens. Cover with fruit if you want the best cheesecake ever!!!!! Happy eating!!!  Mee
