| Here's a quick recipe for one of my lunchtime favorites, Poppafergie's cheesie po-tatoes. I call 'em po-tatoes, because they're cheap and easy. The list of ingedients is simple. You will need; 1 potato I recommend using a red or new potato, the skins are thinner and easier to clean Extra virgin olive oil I use a pump spray to coat the potato Salt and fresh cracked, black pepper Medium chedder cheese (shredded) Ok, let's begin by cleaning our potato under cold water and pokeing it all around with a fork. Next, pop it into the microwave at high heat for 3 minutes. Allow potato to rest for 10 minutes, potato will finish cooking itself. Next, split the potato in half and place it face down on a pie pan, Spray it with olive oil and generously add salt. Flip the halves over and squash them with a plate to1/4 inch thick, Coating the underside of the plate with olive oil will keep it from sticking. Next, give the tops of the halves a spray with olive oil and lots of salt and pepper. Now, add chedder. Don't worry if any falls off into the pan. We have a use for this. Optional: You can add bacon bits or green onion if you wish Now, pop these babies into an oven, which has been preheated to 450c. Cook for about 10 minutes until cheese browns. For an added kick, scrape any burnt chedder from the pan and toss it on top. Trust me, you'll like it. |
