WILD RICE CHICKEN CASSEROLE
Yields 4-6
1 6-oz. pkg. long grain and wild rice mix
1/2 cup chopped onion
1/2 cup chopped celery
2 tbsp. butter or margarine
1 can cream of mushroom soup
1/2 cup dairy sour cream
1/3 cup dry white wine
1/2 tsp. curry powder
2 cups cubed cooked chicken or turkey
Prepare rice mix according to pkg. directions.  Meanwhile, cook onion and celery in butter or margarine till tender.  Stir in soup, sour cream, wine and curry.  Stir in chicken and cooked rice; turn into a 2-qt. casserole or a 12 x 7 1/2 x 2-inch baking dish.  Bake, uncovered, in a 350 oven for 35-40 minutes.  Stir before serving.
