SWEET POTATO PATTIES
3 medium sweet potatoes
2 beaten eggs
1 medium onion, chopped
1/2 tsp. salt
Cooking oil
Wash and peel sweet potatoes.  Shred the sweet potatoes.  In a large mixing bowl, combine shredded sweet potatoes, eggs, onion and salt.  In a large skillet heat about 1/4 inch cooking oil over medium heat.  For each patty, spoon about 1/4 cup of potato mixture into the hot oil.  Spread to make a circle about 3 1/2 to 4 inches.  Fry sweet potatoes patties, 2 to 3 at a time, for 1 1/2 to 2 minutes on each side or until brown.  Drain on paper towels.
