SURPRISE CHEESEBURGERS
Yields 8
2 lbs. lean ground beef
1/2 lb. cheddar cheese, cut into 8 slices
1 tbsp. vegetable oil
8 hamburger buns
8 tbsp. ketchup
8 tbsp. prepared mustard
1 head lettuce, rinsed and separated
Divide beef into 8 equal portions.  Wrap each portion around an individual slice of cheese.  Seal the seams well and gently flatten to form a fat patty.  Heat oil in a skillet and cook patties on medium-high heat for 5 minutes.  Flip burgers, cover, reduce heat, and cook until no longer pink inside, about 5 more minutes.  Place each patty in a hamburger bun and serve with ketchup, mustard and lettuce.
