SUNDAY MORNING COFFEE CAKE
Yields 9 servings
2 tbsp. butter, softened
1/2 cup sugar
1/2 tsp. salt
1 egg
2/3 cup milk
1 tsp. vanilla extract
1-1/2 cups all-purpose flour
3 tsp. baking powder

Topping:
1/4 cup sugar
2 tbsp. all-purpose flour
1 tbsp. ground cinnamon
1/4 cup cold butter
In a small mixing bowl, beat butter, sugar and salt until crumbly.  Add the egg, milk and vanilla; mix well.  Combine flour and baking powder; add to butter mixture.  Transfer to a greased 8-in. square baking dish.

For topping, in a small bowl, combine the sugar, flour and cinnamon; cut in butter until mixture is crumbly.  Sprinkle over batter. Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.  Cool on a wire rack for 10 minutes.  Serve warm if desired.
