SPICY SHRIMP SCAMPI
3 tbsp. olive oil
12 jumbo shrimp, peeled and deveined
2 tbsp. garlic, minced
1 tbsp. red pepper flakes
2 tbsp. lemon juice
2 tbsp. white wine
1 tsp. salt
3 tbsp. unsalted butter
2 t bsp. fresh parsley, chopped or 2 tsp. dried parsley
Heat the oil in a skillet over medium heat and add the shrimp.  Cook about 4 minutes.  Add the garlic, pepper flakes, lemon juice, wine and salt.  Cover and cook 3 mintues.  Uncover and beat in the butter.  Remove from heat and mix in the parsley.
