SOUTH OF THE BORDER CASSEROLE
Yields 6
1 lb. lean ground beef
1 onion, peeled and chopped
1-1/2 cups cooked rice
1 can (15 oz.) ranch-style beans
8 oz. shredded cheddar cheese
1 pkg. (10.5 oz.) corn chips
1 can (14.5 oz.) diced tomatoes and green chilies, drained
1 can cream of mushroom soup
Preheat oven to 350.  Spray a 2-qt. baking dish with vegetable cooking spray.  In a large skillet, brown ground beef and onion; drain.  Layer in prepared baking dish and top with cooked rice, beans, cheddar cheese, corn chips, diced tomatoes and cream of mushroom soup.  Bake for 30 minutes, or until hot and bubbly.
