SAVORY HAM AND RICE
Serves 4
1 cup chopped carrot
1/2 cup chopped onion
1/2 cup chopped green pepper or sweet red pepper
1/2 cup water
1 can cream of celery soup
3/4 cup quick cooking rice
8 oz. fully cooked ham, cut into bite size pieces (1 1/2 cups)
1/4 tsp. ground sage
1/8 tsp. pepper
Paprika (optional)
In a medium saucepan combine carrot, onion, green pepper, and water.  Bring to boiling, reduce heat.  Cover and simmer for 4 to 5 minutes or until crisp-tender.  Do not drain.  Stir in soup, uncooked rice, ham, sage, and pepper.  Spoon into a 1 1/2 qt. casserole.  Sprinkle with paprika, if desired.  Bake, covered, in a 350 degree oven for 30-35 minutes or until rice is tender and mixture is heated through.
