SALMON PATTIES
Serves 2
1 cup mashed potatoes (with milk and butter)
1 can (6 oz.) salmon, drained, skin and bones removed
1/4 cup chopped onion
3 saltines crackers, crushed
1 tbsp. minced fresh parsley
1/8 tsp. salt
1/8 tsp. pepper
1 egg, separated
2 tbsp. vegetable oil
In a medium bowl, combine the potatoes, salmon, onion, cracker crumbs, parsley, salt, pepper and egg yolk; mix well.  Beat egg white until stiff peaks form; fold into salmon mixture.  Shape into six patties.  Heat oil in skillet; fry patties over medium for 3-4 minutes per side or until lightly browned.
