| 1 lb. small red potatoes 1 tbsp. olive or vegetable oil 1/2 tsp. salt 1/8 tsp. pepper 2 tbsp. grated Parmesan cheese |

| Cut the potatoes into 1/4-in. thick slices; toss with oil. Place in a single layer in a greased 13x9x2-in. baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350 for 40 minutes or until tender. | ||
