POTATO STUFFED MEAT LOAF

Meat Loaf:
1-1/2 lb. lean ground beef
1/4 cup Hungry Jack Mashed Potato Flakes
1/4 cup milk
1 egg, beaten
1/4 cup sliced green onions
1/2 tsp. salt
1/2 tsp. pepper

Filling:
3/4 cup water
2 tbsp. margarine or butter
1-1/2 cups Hungry Jack Mashed Potato Flakes
1 egg
3 oz. (3/4 cup) shredded cheddar cheese

Sauce:
1/2 cup ketchup
1/4 cup firmly packed brown sugar
1 tsp. dry mustard
Heat oven to 350.  Grease 9 x 5-inch pan.  Line pan with large piece of foil extending edges 2-in. on all sides.  Press into corners.  Grease bottom and sides of foil.  Set aside.  In a large bowl, combine all meat loaf ingredients; blend well.  Press half of mixture evenly in greased foil-lined pan.  In medium saucepan, heat water and margarine to a rolling boil.  Remove from heat.  Stir in 1-1/2 cups potato flakes, 1 egg, and cheese; blend well.  Spoon evenly over meat layer in pan.  Spread remaining meat mixture evenly over potato layer, pressing gently into potatoes.  In small bowl, combine all sauce ingredients.  Spoon evenly over meat mixture.  Bake at 350 for 60-70 minutes or until thoroughly cooked in center and meat thermometer registers 160.  Let stand 5 minutes.  Drain off excess liquid.  Carefully lift meat loaf out of pan.  Place on serving plate.  Cut into slices.
