POTATO & FRANKS CASSEROLE
2 tbsp. onion, chopped
3 tbsp. butter or margarine
1/4 cup flour
1-1/2 tsp. salt
1/8 tsp. pepper
2 cups milk
1 cup swiss cheese, shredded
2 tbsp. fresh parsley, minced
5 potatoes, peeled and thinly sliced
8 hot dogs, halved and sliced
In a saucepan, saute the onions in butter until tender.  Stir in the flour, salt and pepper.  Gradually add in the milk.  Bring to a boil over a medium heat then remove.   Add in the cheese, stir until melted.  Add in the parsley.  Place the potatoes in a greased 2-qt. baking dish.  Top with half the sauce.  Arrange the hot dogs over the sauce.  Top with remaining potatoes.  Cover and bake in a 350 oven for 1-1/2 hours or until bubbly.  Uncover and bake 10 minutes more.
