| 1 lb. lean ground beef 1 sleeve crackers, finely chopped 1 egg 1 tsp. salt 1/2 tsp. pepper 3/4 tsp. garlic 1 cup salsa sauce (use either mild, medium or hot) 1 tbsp. prepared mustard (optional) cheddar cheese, grated |

| Mix the ground beef with the cracker crumbs, egg, salt, pepper, garlic and 1/2 cup of salsa sauce. Shape into a loaf and put between two sheets of waxed paper. Roll out, keeping a rectangular shape, until is about 1/4-in. thick. Spread grated cheese on top, leaving about 1/4-in. on all sides. Roll the meat up jelly roll style, securing all open ends. You should be left with a loaf shape. Place in greased metal pan (or glass) and bake in a 350 degree oven for 45 minuets Drain off excess fat. Spread mustard over the top of the loaf, if desired. Spread on the remaining salsa sauce. Bake for 15 minutes longer then let set 10-15 minutes before cutting into slices. | ||||
