| MAYONNAISE CAKE | |||
| 1-1/2 cup raisins 1-1/2 cup chopped pecans 1 cup ganulated sugar 2 cups self-rising flour 3 egg yolks 1 cup mayonnaise 1 cup boiling water 1 tsp. baking soda 1/2 tsp. salt |

| Pour boiling water over raisins; add baking soda and let cool. Mix mayonnaise with egg yolks in a mixing bowl. Add sugar and salt. Add the raisin mixture alternating with flour and nuts until all have been well blended. Bake in 4 greased and floured pans for 20-30 minutes or until layers spring back when lightly touched and and pull away from the sides of the pans. Cool completely. | |||
| Frosting: 3 egg whites at room temperature 3/4 cup granulated sugar 2 tbsp. water 1/4 tsp. cream of tartar 1/4 tsp. salt 1 tsp. vanilla |

| Combine all ingredients except vanilla and beat over rapidly boiling water in the top of a double boiler until mixture stands in soft peaks. Remove from heat. Add the vanilla and continue beating until thick enough to spread on cooked layers. | |||
