HOPPIN JOHN
Yields 8-10
3 cans (15-1/2 oz.) black eye peas, rinsed and drained
2 cans (13-3/4 oz. each) chicken broth
1 pkg. (16 oz.) Louis Rich Turkey Smoked Sausage, browned and thinly sliced
2 cups chopped onion
1 cup water
1 tsp. crushed red pepper flakes
1/2 tsp. ground red pepper
2-1/2 cups Minute Premium Long-Grain Rice, uncooked
Place peas, broth, sausage, onions, water and seasonings in medium saucepan; bring to a boil.  Stir in rice; cover.  Simmer 10 minutes or until rice is tender. Garnish with chopped parsley, if desired.
