FRIED TOMATOES
4 tomatoes, half ripe
1/2 cup flour
2 1/2 tsp. salt
2 1/2 tsp. sugar
1/4 tsp. pepper
3/4 cup evaporated milk
oil for frying
Cut each tomato into 3/4 inch slices.  Place on a paper towel to drain. Combine the flour, salt and pepper.  Dust the tomatoes on both sides in the flour.  Add the evaporated milk to the remaining flour to make a thick batter.  Dip the floured tomatoes in the batter.  Fry in very hot oil that is 1/2 inch deep.  Fry until golden on both sides.
