CRUNCHY OVEN FLOUNDER
Serves 4
1 lb. flounder (or any other lean fish fillets)
1/2 cup sour cream
1 tbsp. lemon juice
1/2 tsp. chili powder
3/4 cup corn chips, crushed
2 tbsp. margarine or butter, melted
Preheat the oven to 500.  Make sure the oven racks are in the middle or one above middle position.  Grease a 13 x 9 baking dish with non-stick cooking spray.  Mix the sour cream, lemon juice and the chili powder together.  Dip the fish in the sour cream mixture then coat with the crushed corn chips.  Place the coated fish in the baking dish and drizzle with the melted butter.  Bake uncovered for 10-12 minutes or until the fish flakes easily with a fork.
