CRUMB COATED CHICKEN THIGHS
Yields 4
1/4 cup dry bread crumbs
1 tsp. salt
1 tsp. ground cumin
1 tsp. paprika
1 tsp. chili powder
1 tsp. curry powder
1/4 tsp. pepper
8 chicken thighs (about 5 oz. each), skin removed
In a large resealable plastic bag, combine the first seven ingredients.  Add chicken, a few pieces at a time, and shake to coat.  Place, uncovered, at 400 for 20 minutes.  Turn chicken pieces; bake 15-20 minutes longer or until a meat thermometer reads 180.
