CREAMY FRUIT MOLD
Yields 8
1 cup boiling water
1 pkg. (4-serving size) Jell-O Brand Gelatin, any flavor
1 cup cold water or apple juice
1-1/2 cups thawed Cool Whip Whipped Topping
1 cup diced fruit
Stir boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved.  Stir in cold water.  Refrigerate about 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites).  Gently stir in whipped topping.  Refrigerate about 15 minutes or until thickened.  Stir in fruit.  Pour into 5-cup mold. 

Refrigerate 4 hours or until firm.  Unmold.  Garnish as desired.  Store leftover gelatin mold in refrigerator.
