COUNTRY FRESH POTATO SALAD
Serves 8
Salad Ingredients:

4 cups water
2 lbs. (about 12) smalll new red potatoes
3 cups water
1/2 lb. fresh green beans, cut into 1 1/2 in. pieces
8 oz. (1 1/2 cups) Land O Lakes America cheese, cubed 1/2 inch thick
6 oz. salami, cubed 1/2 inch
Dressing Ingredients:

1/2 cup Land O Lakes sour  cream
1/2 cup mayonnaise
1/4 cup chopped red onion
2 tbsp. country style Dijon mustard
1/2 tsp. coarsely ground pepper
Bring 4 cups water to a full boil in 3-qt. saucepan; add potatoes.  Cook over high heat until potatoes are fork tender (12-15 minutes).  Drain; rinse with cold water.  Cool; cut into 1/4 slices.  Meanwhile bring 3 cups water to a full boil in 2-qt. saucepan; add beans.  Cook over high heat until crisply tender (5-7 minutes).  Drain ; rinse with cold water.  Place potatoes, beans, cheese and salami in large bowl.  Stir together all dressing ingredients in small bowl.  Gently stir dressing into salad to coat well.  Cover; refrigerate at least 1 hour.
