CORN AND BEAN CHILI
Yields 14-16
2 lbs. ground beef
1 small onion, finely chopped
1 envelope chili seasoning mix
3 cans (16 oz.) chili beans, un-drained
1 can (46 oz.) V-8 juice
1/2 tsp. salt
1 can (16 oz.) cream style corn
Shredded cheddar cheese
In a 5 qt. kettle or dutch oven, brown beef and onion.  Stir in seasoning mix, beans, V-8 juice, and salt.  Simmer, uncovered, for 15 minutes.  Stir in corn.  Cook and stir over low heat for 15 minutes.  Garnish with cheese.
