COLD DAYS RICE
1 cup uncooked long grain white rice
2 tbsp. butter or margarine
1 onion, chopped
2 cups ready to use chicken broth
1/4 cup mayonnaise
1/2 cup parmesan cheese, grated
1/4 tsp. white pepper
Cook onion in butter until translucent.  Add rice and saute for 10 minutes.  Add remaining ingredients and cover.  Simmer for 25 minutes or until almost all the liquid is gone.  Turn off heat and let stand for 10 minutes.
