CHICKEN MARINARA
Yields 4 servings
4 boneless skinless chicken breast halves (1 lb.)
2 cups sliced fresh mushrooms
3 garlic cloves, minced
1 tsp. dried basil
1/2 tsp. Italian seasoning
1 jar (28 oz.) meatless spaghetti sauce
1/2 cup red wine or chicken broth
Hot cooked angel hair pasta or spaghetti
In a nonstick skillet coated  with nonstick cooking spray, cook chicken for 6 minutes on each side; remove and keep warm. Add mushrooms, garlic, basil and Italian seasoning to skillet; saute until mushrooms are tender.  Stir in spaghetti sauce and wine or broth.  Add chicken; cover and simmer for 10 minutes or until heated through.  Serve over pasta.
