CHICKEN HAM CASSEROLE
Yields about 6 servings
1 pkg. (6 oz.) long grain and wild rice mix
2 cups cubed cooked chicken
1 cup cubed fully cooked ham
1 can cream of chicken soup
1 can (12 oz.) evaporated milk
1 cup (4 oz.) shredded Colby cheese
1/8 tsp. pepper
1/4 cup grated Parmesan cheese
Cook rice mix according to package directions.  Transfer to a greased 2-qt. baking dish.  Top with chicken and ham.  In a bowl, combine the soup, milk, Colby cheese and pepper; pour over chicken mixture.  Sprinkle with the Parmesan.  Bake, uncovered, at 350 for 25-30 minutes or until bubbly.
