CHEESY TWICE-BAKED RANCH POTATOES
Yields about 4 servings
4 medium baking potatoes (about 2 lbs.), baked
1/2 cup Wish-Bone Ranch Up Cheesy, Classic or Zesty Dressing
1 box (10 oz.) frozen chopped broccoli, thawed and drained
8 slices bacon, crisp-cooked and crumbled
1/2 cup (about 4 oz.) shredded cheddar cheese
Preheat oven to 425.

Cut a lengthwise slice from top of each potato.  Remove skin from top slice and place pulp in medium bowl.  Scoop pulp from each potato, leaving 1/4-in. thick shells.

In medium bowl, mash pulp and Wish Bone Dressing.  Stir in broccoli, cheese and bacon. Equally spoon potato filling into potato shells.  On baking sheet, arrange potatoes and bake uncovered 15 minutes or until heated through.  Garnish, if desired, with additional crumbled bacon.
