CHEESY BEEF AND GREEN CHILE RICE
Yields 4
1 (14.5 oz.) can beef broth
1/2 cup onion, chopped
2 cups instant rice
1 (10 oz.) pkg. Stouffers Welsh Rarebit, defrosted according to pkg. directions
1 (4 oz.) can diced green chilies, drained
1 lb. ground beef, fully cooked and drained
1 (14.5 oz.) can Mexican style diced tomatoes
1/2 cup ketchup
Combine broth and onion in medium skillet; bring to a boil and add instant rice.  Cover and turn off heat.  Let stand for 5 minutes.  Add Welsh Rarebit, chilies, beef, tomatoes and ketchup.  Cook over low heat for 5-10 minutes or until hot and thickened.  Add salt and ground black pepper to taste.
