CARROT CAKE
1-1/2 cup oil
2 cup sugar
4 eggs
1 tsp. vanilla
2 tsp. cinnamon
2-1/2 cups self rising flour
1 tsp. baking soda
3 cup grated carrots
1 cup chopped walnuts
Mix together well the first seven ingredients and gradually add 3 cups of grated carrots and one cup of chopped walnuts.  Grease and flour cake pans or use baking spray.  Pour into 3 eight or nine-in. layer cake pans.  Bake at 350 for 30 minutes or until cake tests done.
Frosting:
1- 8 oz. pkg. of cream cheese
1 stick margarine
1 cup chopped walnuts
1 box of confectioner sugar
1-1/2 tsp. vanilla
