CANDIED SWEET POTATOES
2 lbs. sweet potatoes or yams
1/2 cup brown sugar, packed
3 tbsp. margarine
3 tbsp. water
1/2 tsp. salt
Place potatoes in a pot.  Fill with enough water to cover the potatoes.  Add about 1/2 tsp. salt per 1 cup of water.  Cover and cook until boiling.  Cook 30 minutes more until tender.  Drain and peel off skins then cut into 1/2 inch slices.  Mix brown sugar, margarine, water and salt in a skillet.  Cook, stirring constantly until smooth.  Add potatoes and stir until glazed and heated.
