BY THE SEA CASSEROLE
Serves 6
1 bag (16 oz.) frozen mixed vegetables
2 cans (6.5 oz.) tuna in water, drained
1 cup uncooked instant rice
1 can cream of celery soup
1 cup milk
1 cup cheese-flavored fish shape crackers
Mix frozen vegetables with drained tuna.  Stir in instant rice, celery soup and milk.  Place mix in 1 1/2 quart microwave safe casserole dish; cover and cook on High for 6-8 minutes then cover again and cook another 6-8 minutes or until rice is tender.  Stir casserole and serve with crackers.
